Directions

  1. Prepare the marinade: In a bowl, mix the olive oil, Dijon mustard, honey, chopped garlic, balsamic vinegar, thyme, rosemary, salt and pepper. Stir until evenly combined.

  2. Marinate the fish: Rinse the yellow perch under cold water and pat dry with paper towels. Make shallow diagonal cuts on each side. Coat the fish generously inside and out with the marinade, working it into the cuts. Marinate in the refrigerator for 30 minutes to 1 hour.

  3. Prepare the barbecue: Preheat your barbecue to medium-high heat. Make sure the grates are clean and lightly oiled to prevent the fish from sticking.

  4. Grill: Place the fish directly on the barbecue grate. Grill for approximately 5–7 minutes per side, turning carefully halfway through. The fish is ready when the flesh is opaque and flakes easily with a fork. Brush with the remaining marinade during cooking to enhance the flavour.

  5. Serve: Serve the grilled yellow perch garnished with fresh herbs such as parsley or chives.
